If Anyone Needs to Find Me, I Will Now Be Living at Whole Foods

Hi everyone!  I hope you all had a fun and relaxing weekend.  Although it was chilly on Sunday and quite frigid on Saturday, I still went out and did a little bit of exploring!

On Friday night, I actually – don’t ask me why – got started on the next chapter of Orgo reading and problems.  I totally told myself that I could have the week off from Orgo work after Monday’s exam, but I was feeling the need to be productive.  And guess what: I actually finished the chapter on Sunday!  Hopefully that will reduce my workload over Easter break. 🙂

Saturday morning, I got up bright and early (per usual!) and made myself an AWESOME breakfast to power up for housing selection at 10:26.  (I kid you not, 10:26 on the dot…and we had ONE MINUTE to select before the next group could start selecting.  Talk about anxiety!)

This giant pancake is one of my go-to breakfasts both on the weekend and during the week because it is so easy and super tasty!  I just combine 1/2 c. oats, a mashed ripe banana, 2 eggs, a pinch of baking powder, and cinnamon to taste and cook it in a non-stick pan.  When I have canned pumpkin, I like to add some (~2 T.) to the batter – it makes it super fluffy!  The recipe is also delicious with fruit mixed into the batter, but you have to be careful because the pancake will break/fall apart in the pan if the moisture from the fruit thins the batter too much.  (Other good mix-ins are ground flaxseed, a few tablespoons of greek yogurt, or cocoa powder…basically, you can alter the recipe however suits your mood for the day!)  Then, of course, I top it with a liberal amount of PB and enjoy it alongside a few cups of coffee!

Housing selection was definitely nerve-wracking, but we had a good lottery number, so we ended up scoring a really nice apartment in a really good on-campus location!  It’s exciting to think that next year I will be a junior…but also kind of crazy – these first two years really flew by.

After selecting our apartment (and subsequently going across campus and creeping on the one we picked), I headed out into the unseasonably cold day to trek to Whole Foods with one of my future roomies!  She had already been planning to go and I was itching to get some fresh air, so I asked if I could tag along.

I scored some awesome fresh produce (including a few giant Fuji apples, which have become a favorite of mine lately), and couldn’t resist picking up food from the hot bar/salad bar to take back for lunch.


I made myself a kale + romaine salad with buckwheat (it’s hidden under ALL the veggies), shredded cabbage, grape tomatoes and cucumbers (I may have eaten them before I took this picture……….), shredded rainbow carrots, and the most AMAZING grilled tofu.  I don’t always go for tofu – I have to be in the mood – but I did on Saturday and it was definitely a good choice. 🙂  I also enjoyed one of the apples I bought with my salad once I got back to my room!

I spent the rest of the day relaxing and working on Orgo, then met up with a friend for dinner.  After that, I had a date with an episode of Grey’s Anatomy (and snacks…always snacks).  Because, ya know, I like to keep things wild and crazy on my Saturday nights!

I waited until after lunch on Sunday to head out into the city, hoping that it would get a little warmer so that I wouldn’t have to go full-Eskimo to walk anywhere.  I don’t think the temperature really went up, but the wind died down and the sun came out, so it was actually perfect walking weather!  I headed over to Foggy Bottom/GW area and moseyed around for a while, checking out potential restaurants and coffee shops of interest.  I found a couple that I was intrigued by, but they were all closed on Sundays!  Guess that means I’ll just have to go back another day. 🙂

I actually ended up camping out at Whole Foods to get some primary lit reading done for Neuro.  The cafe area in that WF is really nice, so I parked myself on a stool right in front of one of the big windows with an almond milk latte in one hand and highlighter in the other and got down to business.

Not gonna lie, I think I should probably just live at WF…because first of all, I’m apparently there all the time (haha) and second of all, they have genius things like this:


A GRIND-YOUR-OWN-NUT-BUTTER STATION.  Whoever came up with this, let’s be best friends.  I didn’t get any yesterday (poor college student problems), but believe me, I will be going back to grind myself some nut butter in the future!

So that’s what I did this weekend!  Unfortunately, I didn’t venture out as far into the city as I had wanted to because of the chilly weather, but hopefully spring is going to happen for real now so that I can check out some of the other places on my list.

As for this week, I have off on Thursday and Friday for Easter break, so I am headed home tomorrow after my noon class!  I am looking forward to family time and relaxation. 🙂  Only one more day!

Giant Pancakes, Egg Sandwiches, and Lattes

My mom and I tried out this recipe for egg white and oat protein pancakes this morning, and we gave it a big thumbs up!  I added vanilla and cinnamon to taste – they tasted just like french toast, which we loved.

I topped mine with jam and my mom topped hers with ricotta cheese and jam.  I think next time I make them I might experiment with a chocolate-banana version…stay tuned! 🙂

After my workout and my giant pancake, it was time for a trip to the dentist.  I don’t even want to talk about it…haha.  (Who does like the dentist, anyway?)  Then it was off to Dunkin Donuts to grab a few bags of decaf since we were running low, then to Wawa to gas up the car.  Fun stuff, right?

Luckily, my friend M saved the day and was game to meet up at Baltimore Coffee & Tea for lunch and coffee!  Well, I got lunch and coffee, she just got coffee.  What can I say, a girl’s gotta eat! 😀  My favorite is the egg, provolone, and turkey breakfast sandwich on a GF bagel.

Later this evening, I enjoyed a walk with my mom and fur sister – it was the perfect way to end a great day. 🙂

My Lazy Dog, Morning Workouts, and Sweet Potato Hash

Hi everyone!  Happy best-day-of-the-week. 🙂

How has everyone’s week been so far?  I have been enjoying being home – just hanging out with my family and running errands and whatnot.  Last night was the baby sister’s band concert, and she had a flute solo in one of the songs (which she absolutely CRUSHED because she is super talented).  Love that kid.  It was fun to see and hear what they have been learning in band class at school, and she did great!

One of my favorite things about being home is my fur sister – a.k.a. my dog Maggie!  She is the laziest dog EVER, and it is getting worse the older she gets.  Good thing she’s so cute. 🙂  I mean, just look at her…

Another thing I am loving: morning workouts.  I am so used to just rolling out of bed and heading to the gym in the mornings while I’m at school that I have just continued the routine while I’m at home…and it is GREAT.  Nothing beats a morning workout to wake me up and get me ready for the day!  I have been doing elliptical + strength training (every other day) + PT exercises.  Gotta keep getting stronger so I can run! 🙂

Since I’ve gotten home, I’ve been on a cooking/baking streak.  Banana bread, pancakes, you name it – I’ve made it.  After my workout this morning, I made something especially delicious for breakfast for my mom and me…

I peeled and cubed the sweet potato then sauteed it in a little bit of olive oil with salt, pepper, and onion powder.  I think my mom and I are hooked…it was SO good!  We enjoyed it with some coffee…photo 4 (2)

…and a pear on the side!  I can see this meal becoming a staple for us this summer. 🙂

And guess what was waiting for me on the porch when we got home from the band concert last night?  MY NEW RUNNING SHOES AND FOAM ROLLER.

Just look at them…so beautiful.  Getting new running shoes is like Christmas!  I may or may not have said, “Ooh new toys!” when I opened the box…

Starting the Day Off Right

Hey everyone!

I’m back after a short but stressful hiatus – I needed to take a little bit of time away from the blog (okay, it was only a few days, but still…) to focus on my oral presentation for Theology, which was last night.  Nope, it’s not even a final – my professor just likes to keep us on our toes.

But apparently, my stressing and practicing and freaking out about it worked because I GOT AN A- ON IT!  This professor doesn’t give A’s, so an A- is just as good as an A in my book. 🙂  Such a relief – I can’t believe he actually liked my presentation!  I felt like I really took a chance by choosing to make it personal instead of simply an objective analysis, but apparently that is exactly what he wanted.  I picked up my last essay from his office this morning too, and I did well on it – again, much to my surprise!  Needless to say, this day is off to a great start.

I could have slept in this morning and gone to the gym later than usual, but my body clock wakes me up at 6:30 no matter when I go to bed, so I figured I might as well do the usual and get an early start to my day!  And I am glad that I did.  The mornings are my “me time,” and I love being up when most people are still sleeping.

Plus, I get pick of the best tables at the dining hall for breakfast and there is always plenty of food since I get there so early.  There is nothing worse than being hangry and having to wait in line for ten minutes for the scrambled eggs to be refilled!  This morning I had my usual: eggs, potatoes, sausage, and fresh fruit.  Oh, and coffee (of course!).

This breakfast was picture-worthy because I got one of the only like five super big coffee cups!  All of the other ones hold about two sips of coffee and I have to refill about fifty times.

After breakfast, it was time to do registration completion for next semester (my schedule is officially finished…woo!) and then watch last night’s episode of Chicago P.D.  When I finished the episode, I looked at the clock…and it was only ten o’clock!  That is my favorite feeling EVER.  I still have the whole day left and I’ve already gotten so much done!  I just finished my last Chem homework assignment and the only thing left to do today is some studying for Spanish.  Productivity for the win!

A Breakfast Kind of Day

A breakfast kind of day is my kind of day!  If I have all this breakfast food, why shouldn’t I eat it?  Following this logic, I ate breakfast food for breakfast AND dinner today.  No shame.

Also, please excuse my awful picture quality today.  My camera picked today to ride the struggle bus and it just decided that dorm room lighting  is unfit for anything useful (I mean…it is, but…), i.e. picture-taking.  So that’s that.

For breakfast, it was a muffin and Greek yogurt to start the day.


Yum!  Kept me full till about noon, and then I had a Kind bar during Stats to hold me over until I could grab lunch.

Lunch was a slice of leftover homemade pizza, grapes, and a handful of pretzels before I had to run off to Theology class!

After Theology, I had a Starbucks date with a friend and then headed over to the gym for a quick workout (x2):

20 pushups

20 crunches

20 tricep dips

20 jackhammers

20 shoulder pushups

20 one-legged squats

20 one-legged calf raises

If I ever don’t post my workout on a given day, there is a 99% chance that this is the one I did.  I have it memorized and it’s great for when I head to the gym between classes or during a busy day when I don’t have the time or extra brainpower to come up with a new workout!

Then my dinner was the best…it was more breakfast-y than my breakfast!  I had a waffle with PB, two clementines, and a cup of decaf coffee.  YUM.


I literally could eat breakfast for every meal of the day.  So delicious!

In other (non food-related) news, it sounds like we could get a whole heck of a lot of snow here tomorrow night into Thursday.  Knock on wood!  I would love love LOVE a snow day on Thursday.  Everyone needs a break during midterms, and what better way to get one than with a snow day! 🙂  Plus I’m from western Maryland and we get lots of snow so I say BRING IT ON.

A Lazy (but Surprisingly Productive) Saturday

Good afternoon, interweb!

I love Saturdays, especially ones with family.  Typically Saturdays are soccer days in my house, but this is the lovely winter lull between fall and spring seasons for the little sister.  So this morning was nice and relaxing…drinking coffee, girl time with my mom while my sister and dad were out, and BAKING!

I hit the food prep hard today and we made muffins and waffles – half of each batch to freeze and half to take back to school for this week.  I had a few of the waffles for breakfast…so good!

We made the waffles from a Baker’s Corner (from Aldi) GF baking mix – the recipe on the side of the box (mix, milk, oil, eggs).  We added 2 Tbsp. ground flax seed to the mix and a little extra milk and the waffles turned out great!


While my mom was making the waffles, I was making a double batch of flourless chocolate chip muffins using a recipe from Running with Spoons.  We are out of almond butter right now so I subbed in PB and they turned out great!  I made them in a square muffin pan because I’m hipster like that (but not really…).


They’re delicious!  Very moist and easy to make – took about 20 minutes to prep (mainly because our blender sucks at life) and about 15-17 minutes to bake since the pan was dark.  They’re pretty rich though…I’ll probably cut them in half to have with breakfast this week.

After baking and cleaning up, I did a short workout (2x):

Then it was lunch (banana with sunbutter and a greek yogurt with chia seeds) and some studying for my Spanish test on Monday, then catching up on blogs I follow.  On the agenda for the rest of the day is dinner with the fam (TACOS!) then the little sister’s all-county band concert!  WOOOOO.

Also, I forgot my cast shower cover at school and had to go old-school with the trash bag and duct tape today…luckily I did a smaller bag inside the trash bag because the trash bag somehow leaked (um, hello, LeakGuard?!  Apparently not…) and there was a puddle in the bottom of the bag when I took it off.  Is it bad that I kinda hoped my cast had gotten wet so they would have to take it off a week early?  Sorry not sorry…
